I have another of my own slow cooker recipes here to share with you today. This is for a pork hotpot
t.
Ingredients- serves 4
4 boneless pork chops - just add here if cooking for extra people - You can add them as they are or cut them up like I did.
1 leek
1 yellow pepper
1 courgette
half a sweet potato
2 large carrots
3 gloves garlic
8 shallots ( you can substitute for any other kind of onion here)
3 large potatoes - this will depend on the size of your pressure cooker mine is a large oblong one.
Plain flour
Stock
Method
Cut up the pork chops into even sized pieces and coat in plain flour.
Slice the carrots, courgette, leek, green pepper and the sweet potato and place them in the cooker.
Halve the shallots and add them
Chop the gloves of garlic up finely and add to the pot.
Peel and slice the potaotes thinly. and place on top of the vegetables until they are covered.
Now add your stock until all the ingredients are covered.
Cook on high power for 8.5 hours.
When it has finished cooking you can thicken the casserole stock by adding some plain flour or gravy granules.
I served mine with some roast potatoes.
Tips
If you have any stock left add chunkly vegetables to it the next day and you will have a lovely soup.
Prepare your vegetables the night before as mornings are always busy with other things like getting the children off to school.

Had the food shopping delivered today with the ingredients that I need to make the next recipe.This isn't one of mine but is from the Philadelphia website. We are having it tomorrow and the children can't wait as they love a curry.
I will let you know how it tastes and if it turns out ok will add a photo of it.

Well we have tried and tested the recipe from the philadelphia recipe website. We went for the chutney chicken curry. All of us except my youngest enjoyed it. The chicken was very moist and the taste was lovely. I did have to add a bit more milk and soft cheese but I think it was because I had more chicken.
I think pineapple chunks would be a very tasty addition and will try that when I make it again.
It has a thumbs up from me!
